Indonesian Fish Curry

ingredients
1 1/2 pound cod or coley fillets
1 pinch salt and pepper
2 tablespoons plain flour
1 onion
1 large cooking apple
1 tablespoon lemon juice
2 ounces butter
2 tablespoons oil
2 tablespoons curry powder
1 pint stock
2 tablespoons sultanas
2 tablespoons cornflour
2 ounces split almonds
directions
Cut fish into pieces, sprinkle with salt and coat with flour.
Peel and slice onion. Peel, core and slice apple and sprinkle with lemon juice.
Heat the butter and oil in a flameproof casserole. Add curry powder and onion and fry for 5 minutes.
Add fish and cook for a few minutes on all sides. Add apple slices and cook for 3 minutes.
Pour stock into casserole and add sultanas. Blend cornflour with a little stock or water and stir in. Bring to the boil and simmer for 10-15 minutes.
Add almonds and cook for a further 2 minutes. Taste and adjust seasoning and serve.
