Fish Fillets In Sour Cream

ingredients
4 teaspoons butter, divided
2 pounds fish fillets (sole, haddock or flounder)
1 teaspoon salt
1/2 teaspoon Tabasco sauce
1 teaspoon paprika
1/4 cup grated Parmesan cheese
1 dash lemon pepper
1 dash dill
8 ounces sour cream
1/4 cup fine dry bread crumbs
directions
Grease a 2 quart baking dish with 1 teaspoon butter. Arrange fish in baking dish. Blend salt, Tabasco sauce, paprika, lemon pepper, dill and Parmesan cheese into sour cream; spread over fish. Top with bread crumbs. Dot with remaining butter.
Bake, uncovered, in a 350 degrees F oven for about 25 to 30 minutes or until fish is easily flaked with a fork. Serve with lemon slices.

I first made this dish about 10 years ago. I had one of those recipe books where the recipes came from boxes, bottles and cans. The original recipe for this is from the people that make Tobasco Sauce. This recipe is almost identical to that one. I have it in the oven as I am writing this. I can't tell you how good this is. It's simple to make and fairly inexpensive. But it tastes gourmet. And don't let the 1/2 tsp of hot sauce scare you off. It makes the dish. It not overpowering and just adds a little heat to the aftertaste of the dish. This is probably my husbands favorite dish that I make. Haven't done it in a few years as I lost the recipe and TObasco doesn't have it on it's website. When I saw this I was so happy. I knew right away this was it. Now, I don't have dill right now so I add a pinch of rosemary and some parsley I dried from my herb garden. I had a ritz cracker crumb topping that I made too much of for another dish the other day. So, I just used those instead of the bread crumbs. I don't expect it to make a real difference. Try something different and give this a go. Your tastebuds and your wallet and your waistline will thank you. Delisious dish that's actually good for you. Oh, I used light sour cream. But I think Id like to try this with plain greek yogurt some time.

Oddly enough, this was one of our favorite fish recipes. We tried it with Tilapia. The sour cream keeps the fish very moist and the bread crumbs give it texture. The ingredients mixed with the sour cream give it the perfect flavor. Serve it with rice pilaf or steamed vegetables. Mmmm!
