ingredients

1 cup thinly sliced mushrooms
1/2 medium cucumber, peeled & thinly sliced
1/2 medium zucchini, thinly sliced
1/4 cup chopped green onion
1 cup sour cream
2 tablespoons chopped pimiento
1 teaspoon chopped fresh dill
1 pound sole or flounder fillets
1/2 cup freshly grated Parmesan cheese
1/2 teaspoon paprika

directions

Combine mushrooms, cucumber, zucchini and onion in 1-quart glass or ceramic baking dish. Cover and cook on High in microwave for 6 minutes. Drain well. Stir in sour cream, pimiento and dill. Set aside.

Arrange fillets in another shallow glass or ceramic baking dish. Cover and cook on High 2-3 minutes. Spread sauce over fish. Sprinkle with cheese and paprika. Cook on Medium until heated through, about 4 minutes. Serve immediately.
