Curried Fish Fillets

ingredients
4 fish fillets, 3/4 inch thick*
2 green onions, minced
2 cloves garlic, minced or pressed
1 teaspoon curry powder
1 teaspoon salt, or to taste
1/8 teaspoon cayenne pepper
2 tablespoons butter or margarine
1 tablespoon salad oil
flour to coat fish
lemon wedges for garnish
parsley for garnish
directions
* For fish, use cod, halibut, salmon, or whitefish. If frozen, thaw fish fillets, refrigerated, overnight.
Pat fish dry with paper toweling.
Mix onions, garlic, curry powder, salt and pepper. Rub mixture into both sides of each steak. Cover and refrigerate for 1 hour.
Heat butter and oil in heavy skillet. Coat fish on both sides with flour. Brown fish on both sides for about 3 to 5 minutes.
Serve with lemon wedges and parsley for garnish.
