Broiled Skate Wings With Brown Butter

ingredients
olive oil, for the pan
1 3/4 pound skinless boneless skate wings
1 tablespoon olive oil
salt and pepper, to taste
2 tablespoons butter
2 tablespoons small capers
1/2 lemon, juiced
1 tablespoon chopped fresh parsley
directions
Turn on the broiler. Set a rack 6 inches from the element. Have on hand a large roasting pan or a jelly roll pan that will not buckle under the heat of the broiler. Add a few drops of oil to the pan. Use your fingers to rub the oil all over the pan.
Set the skate in the pan and use the 1 tablespoon of oil to rub the top of the fish. Sprinkle it with salt and pepper.
Slide the fish under the broiler. Cook the fish for 5 to 8 minutes without turning it until it is browned and cooked through (cut into the middle to check this).
Meanwhile, in a small saucepan, melt the butter. Add the capers and cook the butter until it browns. Set it aside.
Divide the fish among dinner plates, add a spoonful of the brown butter to each piece of fish. Sprinkle with lemon juice and parsley. Serve at once with steamed potatoes.
