Baked Rockfish with Potatoes

ingredients
3 pounds rockfish, scaled, with head, tail, and innards removed
1 large onion
5 medium potatoes
4 slices salt pork
OR
3 tablespoons bacon grease
2 tablespoons flour
1 1/2 cup water
salt and pepper, to taste
directions
Peel the potatoes and cut into rounds. Dice the onion.
Put the potatoes and onion into a baking dish with the fish. Salt and pepper to taste. Add the salt pork or bacon grease, arranging around the fish.
Mix 2 tablespoons of flour in 1 1/2 cups of water and pour over the fish, onion, potatoes, and salt pork. Cover the baking dish, and bake at 350 degrees F until the rockfish is brown.
