1 fillet barramundi or perch fish 2 tablespoons olive oil 1/4 cup dry white wine 3 cloves garlic 1 fresh chile 1/2 cup fresh parsley 1/2 cup fresh shallots 1/2 fresh lemon 1 bunch English spinach, blanched 3 baby potatoes, boiled
directions
In a baking dish, lay a bed of foil. Place onto the foil the fillet of fish. Cover with olive oil, white wine. Spread minced garlic, finely chopped chile, chopped parsley and shallots onto and around fish. Squeeze juice of the lemon onto fillet and some cracked black pepper.
Fold the foil around the fish (like a parcel) and place in a pre heated oven at 375 degrees F for 20 minutes.
Serve with blanched baby spinach and boiled potatoes.
I am making this dish tonight, however I think the portions are to large for the barramundi filets, no where does it say when to add the wine, I will let you know how they came out. The filets I have are not large and they are thin. I got these at Costco

The wine is mentioned in the directions, you add it with the olive oil.
