Baked Fish And Zucchini

ingredients
2 pounds fish fillets (such as flounder, roughy, crappie, etc.)
1 large onion
1 large bell pepper
1 can (16 ounce size) Italian-style tomatoes
1 can (8 ounce size) tomato sauce
3 medium zucchini, sliced
2 tablespoons vegetable oil
3 cups cooked rice
directions
Preheat oven to 375 degrees F. Saute bell pepper and onion in oil. Stir in tomatoes and sauce. Simmer 15 minutes.
Wash fish. Place in baking dish. Arrange zucchini slices over fish. Spoon tomato mixture over all. Season to taste.
Bake uncovered 20-25 minutes. Serve over cooked rice.

I drained the water out of the bottom o f the oven fast pan at the end of the cooking and added a sprinkeling of parmesan cheese over the top. It was delicious!!
