Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

ingredients
1 pound beef fillets
2 tablespoons papaya, raw, ground
1/2 teaspoon garlic, crushed
1/2 teaspoon fresh ginger, minced
1 teaspoon poppy seeds (khus khus)
1/2 teaspoon black cumin
1/2 teaspoon white cumin
6 peppercorns
6 green cardamom pods
3 whole cloves
1 teaspoon red chili powder
1/2 teaspoon turmeric powder (haldi)
2 tablespoons besan (gram flour)
1/2 cup oil
1/2 cup cilantro leaves, chopped
4 green chiles, thinly sliced
2 tablespoons lemon juice
1 cup yogurt, beaten
1/2 teaspoon salt
1 onion, peeled and thinly sliced
directions
In a large bowl combine yogurt, ground papaya, ginger, garlic, poppy seeds, white and black cumin, pepper corn, cardamoms, clove, besan, chili powder, turmeric powder and salt. Mix well to make a thick paste.
Add beef fillets and coat with yogurt paste, rubbing well. Marinate it for 4 to 6 hours.
Heat oil in a saucepan and fry onions to golden brown. Add fillets to saucepan, cover and cook on low heat until tender, about 25-30 minutes, stirring occasionally. (No need to add water, as the meat will release its own water. Add little water, if water dries up quickly.)
Add coriander leaves, green chilies and lemon juice and cook 5 minutes on low heat.
Serve hot with naan or chapati.

This came out delicious. I made it with small pieces of chicken breast so I did not use the papaya. Also I used less besan. A superb recipe. Thanks
