3 pounds beef roast
directions
Preheat oven to 500 degrees F. Season roast as desired.
Cook roast for 25 minutes at 500 degrees F. Remove and cool for 20 minutes.
Reduce oven temperature and continue to bake as indicated below:
Small to medium roast (up to 6 Lb.). Reduce heat to 300 degrees F and cook for another 17 minutes per pound.
Large roast (6 Lb. or more). Reduce heat to 250 degrees F and cook for another 17 minutes per pound.

It doesn't get easier than this. Just go by the timeframe for the size roast you have and it will be perfect every time.

I've tried this recipe 4 times already and every time the roast beef came out just the way I like it. Make sure yo know the wieght of the meat and it should work for you as well.
