ingredients

4 tablespoons butter
4 large potatoes cooked, peeled, and cubed
1/2 bell pepper, seeded and chopped
minced garlic, to taste
salt and pepper, to taste
8 large eggs, lightly beaten
9 slices bacon, cooked and crumbled
1 cup shredded cheddar cheese

directions

Preheat the oven to 350 degrees F.

Heat an oven-safe skillet over medium-high heat. Add the butter. When melted, add the potato cubes and bell pepper. Cook, stirring occasionally, until the potatoes are browned.

Add the garlic, salt and pepper, to taste. Cook for 30 seconds.

Pour the beaten egg evenly over the potatoes. Cook, stirring occasionally, until the eggs start to set. Stir in the crumbled bacon and top with the shredded cheese.

Place the skillet in the oven and cook until the cheese melts, about 5-10 minutes.

Serve the miner's breakfast hot.
