ingredients
3 Hatch green chiles, roasted, chopped and peeled
1 pound Monterey Jack cheese, grated
12 eggs
1 carton (16 ounce size) sour cream
directions
Preheat oven to 350 degrees F. Layer chiles with the grated cheese in a buttered or greased 13 x 9 x 2 inch baking dish.
Combine the eggs and sour cream and pour over the chiles and cheese. Bake for 30 minutes or until it puffs like a souffle.

I made this several times when hatch chiles were at their peak and we never got sick of it. It's very good. It's a rich egg dish of course but that's what makes it so good. Great for guests too.

This recipe is very good! We tried it and our family visiting loved it. We had trouble in the past finding fresh green chile in New York but the last couple of years we've been ordering them online. The chile was fresh and had a great taste. Thanks for the recipe.
