Eggs and toast all in one. Often known by other names, this breakfast recipe is a favorite of kids and grownups alike.
6 eggs
6 slices bread
butter
Cut a round hole in the center of each slice of bread using a biscuit cutter. Butter both sides of the bread.
Heat a griddle or skillet over medium heat. Place the bread on the griddle. Carefully break an egg into the hole in the bread. Cook until the egg is just set. Carefully flip the bread and egg over to cook the other side. When egg is desired doneness, remove from the griddle and serve hot. Season as desired with salt, pepper, ketchup, etc.
Repeat with remaining bread and eggs.

I have always known this to be called either "Egg-In-A-Hole" OR "Toad-In-A-Hole", but perhaps the name is regional. I grew up having this on weekends, when our family was all together for breakfast. Mom always made them using a little bit of bacon drippings in her cast iron frying pan (not butter), and OMG....what delicious flavor the bacon drippings added to the bread, & the bread was nice & crispy around the edges. These were served with sausages, & a side of mom's homemade Loaded Hash Brown Potatoes. Now that I'm an adult, I like them even better just as my parents ate them....using Jewish Rye Bread. This is truly an Oldie-But-A-Goodie, & also super easy to make.
