1/4 cup butter or margarine
1/4 cup flour
1/2 teaspoon salt
2 cups milk
1/4 teaspoon curry powder
8 boiled eggs, sliced
Make a white sauce by melting the butter, stirring in the flour and salt, and gradually adding the milk while stirring. Cook over medium heat stirring constantly until thickened. Add the curry powder and mix well. Add the eggs and allow them to heat through. Serve on toast.

this is a standard breakfast for me. I use a little less milk so it's thicker.

This is identical to my mother's curried egg recipe I grew up with. Its comfort food for me. My children loved it as it is very mild in taste and has a creamy texture. If the toast is very crisp, it lends a crunch that makes it more interesting. For more spice, red pepper flakes can be added.
