Creamy Poached Eggs

ingredients
1 cup milk
3/4 cup shredded American cheese
1 tablespoon butter or margarine
1 tablespoon sliced green onion
1 tablespoon all-purpose flour
1/2 cup dairy sour cream
1/4 cup sliced pimiento-stuffed olives
4 eggs
4 English muffins, split, toasted, and buttered
directions
In an 8-inch skillet combine milk, cheese, butter, and green onion. Heat and stir till cheese is melted. Stir flour into sour cream; stir in about half of the hot cheese mixture. Return to skillet. Cook and stir till thickened and bubbly. Cook and stir 1 to 2 minutes more. Stir in olives.
Break an egg into a small dish. Carefully slide egg into cheese mixture. Repeat with remaining eggs. Cover; cook over low heat 3 to 5 minutes or to desired doneness. Serve eggs in sauce on English muffins.

Amazing! I did omit the olives though. I like that the eggs are poached in the cheese sauce instead of water like I normally cook them. This is a new favorite.

I am so happy that I found this recipe. The cookbook I had that contained this recipe was ruined when my home was flooded from hurricane Irene. I had the cookbook for 20 years and thought the recipe was gone forever. I love this recipe. Thank you so much for posting.

Used to make this alot, glad to 'find' the recipe again! Very nice for 'breakfast for dinner' as it is a bit heavy.
