Home-Style Slow Cooker Tomato Juice

Nothing beats fresh, homemade tomato juice. The crock pot gently cooks the tomatoes, releasing all the juices. A great way to use up a bumper crop of tomatoes too!

ingredients

10 large tomatoes, seeded & sliced
1 teaspoon salt
1 teaspoon seasoned salt
1/4 teaspoon black pepper
1 tablespoon sugar

directions

Place tomatoes in crockpot. Cover; cook on low for 4-6 hours.

Pour the tomatoes and liquid from the crock pot through a fine-mesh sieve or through several layers of cheesecloth into a bowl.

Season the juice with the salts, pepper, and sugar (adjusting amounts as needed).

Mix well. Pour into a covered container and chill well.

    I make this recipe every year when my garden goes crazy with tomatoes. We always get more than we can use or even give away so we start to get creative with uses. This juice also freezes pretty well. I make up a batch and put it in sealed zip top bags and freeze them flat then stack them in the freezer.

    Simple recipe. Takes some patience and a little prep time, but if you've never had freshly-made tomato juice and like the stuff you buy in a can or jar, then you've never really had tomato juice! Great for when you've got tomatoes galore and aren't sure what to do with all of them. Regarding adding of the salts--start with less and add more to taste. Drink your tomatoes!
