Tomato juice is one of those things that's easy to make, and easy to drink. It's the perfect beverage when you need a quick pick-me-up. It's also great for Bloody Marys.
1 (6 ounce can) tomato paste (no additives)
1 tablespoon salt
1 tablespoon lemon juice
6 cups water
Tabasco sauce (optional)
Combine the tomato paste, salt, lemon juice, and half of the water in a large pitcher. Stir well to dissolve the tomato paste.
Add the remaining water and tabasco, if using.
Place the pitcher in the refrigerator and chill for 2 hours before serving.
Store the tomato juice in the refrigerator for up to 1 week.

I used celery salt instead of regular salt and added a little black pepper and reduced the lemon juice to just a squeeze.

Super simple and delicious. Next time i will add celery juice. I used Italissimo tomato paste , the can is lined , but also because it is a paste made with fine Italian tomatoes. Would like to know however , how long juice will last in fridge.
