ingredients
8 apples, peeled and quartered
1/2 cup water or apple juice
2 cloves
3/4 cup sugar
3 egg whites
2 tablespoons sugar
1 pinch cream of tartar
rum
directions
Place the apple, the water or juice and cloves in a saucepan. Cook over medium heat stirring often, until the apples are cooked. Remove from heat.
Pour 3/4 cup sugar over the apple mixture and beat vigorously until the sugar is dissolved and the apples are pureed. Allow the mixture to cool and remove the cloves.
With a hand beater, beat the egg whites together with the cream of tartar and 2 Tbsp. sugar. Fold into the applesauce along with the rum. Turn into a bowl and refrigerate.
