Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
Amaretto Tortoni

ingredients
1/4 cup coarsely chopped almonds (divided)
3 egg yolks
1 egg
1/4 cup sugar
1/4 cup Amaretto
1 cup heavy cream, whipped
1 cup coarsely chopped soft macaroon cookies
6 maraschino cherries
directions
Place almonds on baking sheet. Bake in a 300 degrees F oven, stirring occasionally, for 10 to 15 minutes, or until toasted. Set aside to cool.
In a medium bowl, combine egg yolks, egg, and sugar. Beat until mixture thickens, abut 8 to 10 minutes. Stir in Amaretto. Fold in whipped cream, macaroons and 3 tablespoons of the toasted almonds.
Spoon tortoni into individual parfait or large wine glasses, sprinkle remaining nuts evenly over tops. Cover and freeze for several hours or overnight.
Garnish each with a cherry before serving.
