ingredients

2 cups cooked rice
1/2 cup sugar
6 tablespoons plain flour
1/2 teaspoon vanilla extract
3 teaspoons baking powder
oil (for deep frying)
1/2 teaspoon grated nutmeg
2 large eggs (beaten until frothy)
icing sugar (for sprinkling)

directions

In a large bowl, mix rice, eggs, sugar, vanilla and nutmeg.

Sift flour and baking powder together and stir into rice mixture until thoroughly combined.

Heat oil in a deep frying pan and when moderately hot drop mixture in spoonfuls into the oil and fry on medium heat until golden brown and nicely puffed. Turn them to brown all over.

Lift out with slotted spoon and drain on absorbent paper. Sprinkle with icing sugar and serve warm.
