Pumpkin Fritters (Barrigas De Vieja)

ingredients
1 1/2 pound pumpkin, peeled, cut in chunks
2 tablespoons salt
8 cups water
2 tablespoons butter or margarine
1 cup sugar
1 egg
1 cup flour, all-purpose or self-rising
3/4 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg, optional
1/2 pound shortening

1 cup oil
directions
Boil pumpkin in a large, covered pot with water and salt at high heat for 30 minutes.
Drain water and mash pumpkin, then drain again.
Mix mashed pumpkin together with butter, egg and sugar. Sift flour with nutmeg, cinnamon and vanilla and add to pumpkin mixture.
Drop by spoonfuls into heated oil. Oil should be enough to cover fritters. Cook until both sides are lightly browned and serve hot.
