Pan Fried Cauliflower Fritters

ingredients
1 head cauliflower
3 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons water
1 egg, slightly beaten
1 medium onion, chopped
1/4 cup oil
directions
Separate cauliflower into small florets. Bring salted water to boil and add florets, bring to boil again, cover and cook 5 minutes. Drain, coarsely chop and set aside.
Mix flour, salt, pepper, water, and egg then stir in onion and chopped cauliflower.
Heat oil in large skillet, drop cauliflower mixture by tablespoonsful into the hot oil and saute 3 minutes on each side or until brown.
Drain on paper towels.

Drained the heck out of the cauliflower but still had to add flour. Not sure how to get it drier than I did. Baked it? I added a little crushed red pepper to the batter for extra flavor then topped with parm cheese as soon as they were flipped from the first side in the pan. Yummy, just need to tweak the method a bit for draining or else adjust for more flour.

These are delicious! Make sure to drain the cauliflower very well (or steam it instead of boiling). Ours wasn't as well drained as we needed so we had to add a little more flour to the batter.
