ingredients
1 cup red onion, diced
2 tablespoons garlic, minced
1 ounce butter
2 eggs
1 cup buttermilk
1/4 cup milk
1 cup dry jack cheese, diced
1/4 cup cilantro, chopped
1/4 cup oregano, chopped
1 cup all-purpose flour
1/4 cup cornmeal
3 ounces toasted pecan pieces
2 tablespoons baking powder
salt and pepper, to taste
directions
Saute onions and garlic in butter until soft (about 4 minutes).
In a stainless steel bowl, whisk together eggs, buttermilk and milk. Set aside.
In a large bowl, mix all dry ingredients together, including cheese and pecans. Add onions and garlic and fold into egg/milk mixture.
Fry 2-ounce scoops in deep fryer at 325 degrees F for approximately 3 minutes. Transfer to a paper towel, blot excess oil and serve hot.
