It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

A quick and easy Christmas dessert. Just mix softened vanilla ice cream, peppermint extract, and crushed candy canes together and refreeze.

14 candy canes
1 quart vanilla ice cream
1/2 teaspoon peppermint extract
Place the candy canes inside a zipper-top bag and crush gently with a hammer or the flat side of a meat mallet. They should be about 1/4-inch or smaller in size.
Place the ice cream in the microwave and soften for 10 seconds. Remove to a large bowl.
Combine the ice cream with the peppermint extract and crushed candy canes until evenly blended. Transfer the mixture to a plastic container with a lid and place in the freezer until firm, about 1-2 hours.

This recipe is really easy to make and tastes great. Adding the candy canes to the ice cream before it hardens in the freezer makes for a nice texture. It's also really easy to adjust the amount of peppermint extract depending on your taste- you could go up to 1/2 teaspoon or more, but I found that it was already pretty flavorful with just 1/2 teaspoon.
