Soupe Aux Gourganes (Bean Soup)

ingredients
2 pounds fresh or frozen gourgane beans
1 onion, finely chopped
1 carrot, finely chopped
1/4 cup uncooked pearl barley, rinsed
1/4 pound salt pork
salt and pepper
1/2 teaspoon dried savory
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives
directions
If using fresh beans, shell and discard pods. In a large, heavy saucepan, combine beans with onion, carrot, barley and salt pork.
Cover with boiling water to a height of 2 inches above the ingredients. Simmer gently, covered, for 1 1/2 to 2 hours or until beans are tender.
Season with salt, pepper, savory, parsley and chives, continuing to cook gently until flavors blend, about 15 minutes more.
Cool, chill and remove solidified fat. Reheat and serve.
