It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

ingredients
4 pounds sirloin tip roast, trimmed
1 teaspoon salt
1 tablespoon flour
1 teaspoon canola oil
1 1/2 cup barbecue sauce
1 1/2 cup fat-free beef broth
1/4 cup Worcestershire sauce
3 cloves garlic, minced
1 teaspoon dry mustard
1/4 teaspoon black pepper
2 tablespoons lime juice
2 small heads cabbage, cut into 4 wedges each
25 pearl onions
4 medium potatoes, peeled and cubed
4 medium sweet potatoes, peeled and cubed
directions
Heat oven to 350 degrees F.
Sprinkle roast lightly on all sides with salt and flour.
Heat oil in a large non-stick skillet over medium-high heat. Add roast and brown on all sides. Remove roast from skillet and place in a large roasting pan.
In a medium bowl, combine barbecue sauce and next 6 ingredients. Mix well and pour over roast. Cover and cook 1 hour. Reduce heat to 325 degrees F and cook 1 hour more.
Baste roast with sauce every half hour. Remove roasting pan from oven. Arrange vegetables around roast, starting with cabbage on the bottom, followed by onions, white potatoes and then sweet potatoes. Baste roast and vegetables with sauce. Cover, return to oven and cook for one more hour.
Remove roast from oven. Allow to stand 15 minutes before carving. Slice thinly and arrange on a serving platter surrounded with the vegetables.
Remove as much fat as possible from sauce in pan. Pour half the sauce over meat and serve.
