Slow Cooker Louisiana Roast with Roux Gravy

ingredients
3 pounds lean or trimmed roast
3 cloves garlic, minced
1 small onion, chopped
2 jalapenos, finely chopped
1 celery stalk, chopped
salt & black pepper, to taste
2 cups water
4 tablespoons flour (for roux)
4 tablespoons oil (for roux)
1 pot cooked rice
directions
For roux, slowly brown flour and oil in a cast iron skillet until dark brown. Avoid burning.
Place roast in crock pot. Add garlic, onion, jalapenos, and celery. Season with salt and pepper to taste. Add the water. Spoon roux into liquid. Cook on low for 8-10 hours. Serve over rice.
Variation: One small chopped bell pepper and red pepper to taste can be used in place of jalapenos.
