Slow Cooker Goat Cheese And Black Bean Dip

2 cans (14 ounce size) black beans, drained
1 medium onion finely diced
4 cloves garlic minced
1 tablespoon cumin
1 teaspoon cayenne pepper
14 ounces fresh goat cheese, crumbled or any other fresh farmer's cheese
2 tablespoons green onions, thinly sliced
2 tablespoons fresh cilantro, chopped
Garnish
1 tablespoon green onions, thinly sliced
1 tablespoon fresh cilantro, chopped
2 tablespoons pumpkin seeds, shelled and toasted
directions
Combine all the ingredients in the crock pot slow cooker, except for the garnish ingredients. Cook on HIGH 1 1/2 to 2 1/2 hours or until the cheese has melted and is bubbly.
Transfer to your serving dish and garnish the top with a sprinkling of green onions, cilantro and pumpkin seeds.
