1 1/2 teaspoon butter
1/2 large onion, chopped
4 cups chopped cooked chicken
1 can (10.75 ounce size) cream of chicken soup
1 cup sour cream
1/2 cup milk
1/2 cup chopped pimiento
1 cup shredded mild cheddar cheese
6 frozen biscuits, thawed
Preheat oven to 350 degrees F. Grease the bottom and sides of an 11 x 7-inch baking dish.
Heat butter in a small nonstick skillet over medium-high heat until melted. Stir in onion and saute until tender. Transfer onion to a medium bowl. Add the chicken, soup, sour cream, milk and pimiento and mix well.
Spoon mixture into prepared baking dish. Bake for 15 minutes. Remove from oven. Sprinkle baked layer with 3/4 cup of the Cheddar. Arrange biscuits in single layer over top.
Sprinkle with remaining Cheddar. Bake until biscuits are golden brown and the sauce is bubbly, about 20 minutes longer. Serve immediately.

Loved this! I swapped out the chicken, and used turkey( it's what I had). I did have to cook the last step longer. 35 minutes, because after 20 minutes the biscuits were still doughy on the bottom. Will make again, but will also add frozen peas.

This is one of those crazy day dinner recipes that come in so handy. I use frozen seasoned chicken strips and thaw them in the micro while I'm sauteeing the onion and prepping stuff. Mix the first step and pop it in the oven while I get the kids' school stuff sorted for their homework. Pop it back in the oven with the biscuits and then set the table and by the time I corral the kids and husband into the kitchen the dinner is ready and we're ALL happy! This is one of the few recipes where I'll use canned soup (other than broths) but it's a lifesaver on some days plus it's palatable and everyone always eats every bite.
