3 cups dry stuffing mix
1 cup chicken broth
1 cup cooked, diced chicken
Preheat the oven to 350 degrees F. Grease a muffin tin.
Combine the dry stuffing mix, chicken broth, and chicken in a bowl. Mix well to coat the stuffing mix with the broth, letting the stuffing mix absorb the liquid.
Spoon the chicken and stuffing mixture into the muffin cups, pressing gently to compact the mixture in the cup.
Place in the oven and bake at 350 degrees F for 25 minutes or until heated through. Let cool in the pan for 5 minutes then serve.

We added about a cup and a half of chicken as it was what we had leftover and used 2 c of low sodium broth. I also added 1/4 c craisins to the last 3 muffins before I filled the cups. That was very good. I think I would use a half cup of craisins in the whole recipe next time. I also used lower sodium stuffing mix. These were great with some steamed green beans! Thanx for a great idea. So many suggestions use cheese or soup, so this was a real find for us. I have to watch the salt and my husband does not eat anything with cheese or creamed!

I made extra broth to make a gravy to go along with the muffins and the family loved them ~ no muffins left so must be good lol

I did give this a 5 star rating b/c it was Fantastic - however it was a bit dry. I think I will try adding a bit more chicken broth w/ it next time. Other than that I would recommend this to EVERYONE! So fast / easy!
