Chicken Stuffing Casserole

ingredients
1 package chicken or turkey-flavored stuffing mix, such as Stove-Top
2 cups chopped cooked chicken or canned chicken
1 small can mushroom pieces
1/4 cup margarine or butter
hot water as called for by stuffing mix
directions
Preheat oven to 350 degrees F.
In a 2-quart casserole dish with lid, mix the flavor packet, hot water, and margarine or butter, cut into pieces, until the latter is mostly melted. (You can use the drained liquid from the can of mushrooms to replace part of the water).
Stir in the chicken, mushrooms and the stuffing breadcrumbs. Bake, covered, at 350 degrees F for 45 minutes; remove casserole lid and bake another 15 minutes to get the top a little crisp.

This is great with or without gravy. As well as being freezable, it heats up nicely in a microwave, too.
