ingredients

1 package (16 ounce size) frozen mixed vegetable
2 cups chopped cooked chicken
1 can (10.75 ounce size) condensed cream of chicken soup, undiluted
1/4 cup milk
1 teaspoon dried thyme
4 cups frozen tater tots

directions

Heat oven to 425 degrees F.

In a large saucepan over medium heat, combine the soup and milk. Stir until mixed.

Stir in the vegetables, chicken, and thyme. Bring to a simmer, stirring frequently.

Place the chicken mixture in a 1 1/2 quart casserole dish.

Arrange the tater tots on a baking sheet and place in the oven for 10-15 minutes, or until they start to brown.

Evenly place the partially cooked tater tots (browned side down) over the chicken soup mixture in a single layer.

Reduce the oven temperature to 375 degrees F. Place the casserole in the oven, uncovered, and bake for about 45 minutes or until potatoes are crispy brown and the chicken mixture is bubbling.

cook's notes

By partially cooking the tater tots before placing them on the chicken mixture they will stay crispier and have better texture, unlike other recipes that often end up with soggy tots. No one likes soggy tots.

recipe tips

Use frozen vegetables to save time; they are pre-washed and cut.

Add some spices, like garlic powder or onion powder, for extra flavor in the chicken mixture.

If you prefer a spicier casserole, add some diced jalapenos or a dash of hot sauce.

Let the casserole sit for 5-10 minutes before serving to allow the mixture to set slightly for easier serving.

common recipe questions

Can I use leftover rotisserie chicken?

Yes, really any leftover cooked chicken works great in this recipe. Just shred or chop the chicken into bite-sized pieces before adding it to the mixture. If you don't have leftover chicken you can grill, bake, or pan-cook chicken as needed.

What type of vegetables can I use?

You can use any frozen mixed vegetables you prefer, such as a peas, carrots, and corn blend, or green beans, or another blend. Fresh vegetables can be used too, but they may require a longer cooking time.

Can I substitute the cream of chicken soup?

You can use cream of mushroom soup or cream of celery soup as an alternative. There are also lower-sodium or organic options available. You can also make a thick white sauce flavored with chicken bouillon granules to substitute for the soup (since the sauce may be thinner than canned soup you can replace the milk with more of the sauce).

How do I know when the casserole is done?

The casserole is done when the tater tots are golden brown and crispy on top, and the chicken mixture is bubbling around the edges.

Can I prepare this ahead of time?

You can prepare the casserole ahead of time and refrigerate it unbaked. Just add a few extra minutes to the cooking time if baking from cold.

Can I freeze Chicken Tot Pie?

Yes, Chicken Tot Pie can be frozen before it is baked. Just wrap it tightly in plastic wrap and aluminum foil. Thaw it overnight in the refrigerator before baking.

How should I reheat leftovers?

Reheat leftovers in an oven set to 350 degrees F, covered with foil to prevent drying out, until heated through. Alternatively, you can microwave portions, but the texture of the tater tots might be affected.

Can I add other toppings instead of tater tots?

You can substitute tater tots with mashed potatoes, french fries, breadcrumbs, or even a layer of macaroni and cheese for a different texture and flavor.

tools needed

Large Saucepan: For heating the cream of chicken soup and milk together before adding the other ingredients.

Measuring Cups and Spoons: To measure ingredients such as the chicken, thyme, and tater tots.

Casserole Dish (1 1/2 quart size): To combine the chicken mixture and bake the casserole in the oven.

Baking Sheet: To arrange the tater tots for partial cooking before adding them to the casserole.

Spatula or Wooden Spoon: For stirring the mixture of soup, milk, vegetables, and chicken in the saucepan.

what goes with it?

Side Salad with Vinaigrette: A light salad dressed in a zesty vinaigrette brings freshness to the meal.

Cheddar Cheese Sauce: Drizzling warm cheddar cheese sauce over the tater tots brings a cheesy decadence that complements the casserole beautifully.

Bacon Crumble Topping: Crispy bacon crumbles sprinkled on top of the casserole will add a savory crunch.

beverage pairings

Wine Pairings
Chardonnay: A buttery, oaked Chardonnay mimics the richness of the cream of chicken soup, while its citrus notes can freshen up each bite. Look for one that's not too oaky to avoid overpowering the chicken.

Sauvignon Blanc: A fresh, zippy Sauvignon Blanc, with its lively acidity and herbal hints, can brighten up this casserole. It'll complement the thyme and mixed veggies without drowning out the flavors. Aim for one that has bright green apple and citrus notes.

Pinot Grigio: A light and crisp Pinot Grigio is a solid match here. Its fruity profile, often with hints of pear or melon, won't overshadow the dish but will add a refreshing contrast to the creamy chicken mix.

Other Alcohol Pairings
Pilsner: A crisp pilsner works well with the casserole, providing a clean, refreshing finish that will complement the savory chicken and crispy tots without overwhelming them. Look for one with a smooth maltiness and a hint of hops.

Session IPA: If you're into a bit of hop action, a session IPA is a great way to go. The light body and citrusy notes can play off the tater tots, while keeping things light enough not to clash with the creamy filling.

Hard Cider: A dry or semi-dry hard cider brings a fruity brightness that pairs surprisingly well with this comfort food. Its slight sweetness can balance the savory notes. Look for one with apple and maybe a touch of spice.

Non-Alcoholic Pairings
Apple Juice: A good ol' glass of apple juice brings a nice fruity touch. It's sweet enough to please kids but balanced enough for adults.

Lemonade: A homemade lemonade, slightly tart and sweet, can work wonders with the casserole.

Herbal Iced Tea: Brew up some herbal iced tea, perhaps with hints of mint or chamomile. This soothing drink can contrast with the casserole's heartiness.

  1. Valerie REVIEW:

I was craving some "comfort food" and decided this recipe would fit the bill. I partially cooked the tater tots first by putting them on a baking sheet under the broiler for a few minutes (shaking the sheet a few times to rotate them a bit). This just helps keep them crispy on the bottom when they cook on top of the casserole. I used a simple peas, carrots, and corn combo for the veggies. This was quite good and I think a giant step up from the more traditional tater tot casserole.

I prefer this casserole to the usual tator tot one with ground beef.
