POTATO SHELL
3 1/2 cups hot mashed potatoes (no milk, butter or seasonings added)
1 1/2 cup shredded cheddar cheese
1 can (2.8 ounce size) French-fried onions
2 tablespoons chopped fresh parsley
salt, to taste
FILLING
1 1/2 cup shredded or cubed cooked chicken or turkey
1 package (10 ounce size) frozen mixed vegetables, thawed and drained
1 can (10.75 ounce size) condensed cream of chicken soup, undiluted
1/4 cup milk
1/2 teaspoon dry mustard
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
directions
Combine all of the potato shell ingredients; spread over the bottom and up the sides of a greased 2-qt. shallow baking dish. In a large bowl, combine filling ingredients; pour gently into shell.
Bake, uncovered, at 375 degrees F for 40 minutes or until heated through. Let stand for 5 minutes before serving.
