1 large can chicken broth
1 large can chunk chicken
1 bag medium egg noodles
3 cups Colby-Jack Cheese
1/2 teaspoon poultry seasoning
salt
black pepper

directions

Bring chicken broth to boil. Cook egg noodles in broth 8 - 10 minutes. Pour off broth leaving 1/4 of broth in pot. Add chunk chicken, Colby-jack cheese, poultry seasoning, salt and pepper to taste. Pour into 9X13 dish and bake at 375 degrees F for 30 minutes.

    I like this recipe because it's basically a pantry meal and I can keep everything on hand the only thing I need from the store or fridge is the cheese. I usually use whatever cheese I have on hand which is sometimes cheddar or mont jack it just depends but the dish always turns out good.

    I used Vermont Cheddar cheese in place of Colby Jack due to none on hand, used homemade noodles, homemade chicken broth, and added 1 can green chilis (chopped). Results were excellent on a cold, snowy day. Great recipe!

    Modified it to fit what I had on hand and it turned out fine. Used 14.5oz can chicken broth plus 1/2 cup leftover broth with additional water for boiling noodles. Used leftover grilled chicken (2 cups worth)and only 2 cups cheese and cooked for only 20 minutes. Came out fine!
