1 cup diced cooked chicken
2 onions, chopped
2 stalks celery, chopped
2 cups cooked brown rice
1/4 cup dry white wine
2 cups chicken broth
1 cup sliced almonds

directions

Combine the chicken, onions, celery, and brown rice in the crock pot. Stir in the wine and broth. Cover, cook on low for 4-6 hours (or on high for 2-3).

Just before serving, toast the almonds in a skillet or on a baking sheet under the broiler. Serve the chicken and rice with toasted almonds on top.

    I agree with the other reviews that only 1 cup broth is needed. I cooked as directed on high for 2 hours. Turned out good. If you don't use flavorful broth or wine I could see this being bland but I used a really good rich broth so it didn't need salt or anything.

    I really enjoyed this very much - my Middle Eastern husband complained about the lack of spices even though I had put in oregano and thyme. I didn't see the point of a 5 hour crock pot prep for cooked food, so I sauteed the onions and celery and added a diced carrot for good measure. I heated the broth and wine and just added the rest of the ingredients and presto! It was ready in no time.

    I followed Iquicha's advice and only used one cup broth. Very good.

    Since all the ingredients are cooked, this doesn't need 2 cups of broth or 8 hours of cooking time. I used one cup broth and cooked it for four hours and it was done. Also added some salt and dried thyme.
