Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

This is a strange-looking recipe but the result is beautiful and quite tasty as well. I made it with raspberries & peaches so added an extra 1/4 cup sugar to the fruit mixture to compensate for the raspberries' tartness. I also added a pinch of salt to the batter. I will certainly make it again. I have a lot of frozen & canned fruit from last summer and this is an easy way to use it.
