Fresh Peach and Cherry Cobbler

ingredients
6 fresh peaches, peeled and sliced
1 1/2 cup berries
1/4 cup sugar
2 tablespoons buttermilk pancake mix
2 tablespoons minced crystallized ginger
Topping
1 1/2 cup buttermilk pancake mix
2 tablespoons sugar, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 teaspoons sugar
1/3 cup butter, cut into pieces
1/3 cup water
directions
Heat oven to 350 degrees F.
In a large, non-metal bowl, combine all ingredients. Spoon into 8" square or 9" round porcelain baking dish.
For Topping: Mix 1 1/2 cups pancake mix and 2 tablespoons sugar. Cut in butter until mixture is crumbly. Add water. Stir to make soft dough and spoon over fruit mixture, letting fruit show in a 1" border. Sprinkle dough with 2 teaspoons sugar.
Place baking dish on foil-lined cookie sheet. Bake until filling is bubbly (45-55 minutes) and top is nicely browned. Serve with ice cream. Enjoy!
