ingredients
2 cups frozen dark sweet cherries
2 cups frozen blueberries
1/2 cup heat-resistant sugar substitute
2 1/2 tablespoons vanilla dessert mix
2 tablespoons orange juice
1/2 teaspoon ginger
1 1/2 cup reduced-fat all-purpose baking mix
1/2 cup skim milk
1/2 teaspoon cinnamon
directions
In 1-1/2 quart glass baking dish, combine cherries, blueberries, sugar substitute, vanilla dessert mix, orange juice and ginger, mixing well.
Microwave, uncovered, on high for 3 to 4 minutes or until mixture begins to boil and thicken, stirring once or twice. Remove from microwave and preheat oven to 350 degrees F.
Combine baking mix, skim milk, and cinnamon. Mix just until a soft dough forms. Drop by tablespoonfuls onto hot fruit mixture.
Bake for 15 to 20 minutes or until dumplings are golden brown. Serve warm.
