ingredients
2 tablespoons shortening
2 pounds lean boneless pork shoulder, cut in 1 1/2" cubes
2 medium onions, thinly sliced
1 large green bell pepper, cut in strips
1 cup diced celery
1 clove garlic, chopped
1/4 cup orange juice
1/4 cup soy sauce
1/4 cup brown sugar
1/2 teaspoon salt
1/4 teaspoon ginger
2 teaspoons Worcestershire sauce
1/2 cup white wine
1/4 pound mushrooms, halved
2 tablespoons cornstarch, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1 1/2 teaspoon cornstarch
2 tablespoons water

Heat shortening in Dutch oven over medium heat. Add pork and cook until brown. Remove meat from pan. If needed, remove excess fat from pan.
Add onions, green pepper, celery and garlic. Cook until tender. Do not brown.
Mix orange juice, soy sauce, brown sugar, salt, ginger and Worcestershire, then add white wine, slowly pouring it over veggies. Return meat to pan.
Bring to boil. Reduce heat to low, cover tightly and simmer until meat is tender, about 1 hour. Add mushrooms and cook 5 minutes.
Blend cornstarch and water and stir into meat mixture. Bring to a boil. Cook 5 minutes, stirring.
