Cider Pork Stew

The apple cider not only adds flavor but helps tenderize the pork while it cooks.

ingredients

2 pounds boneless pork, fat trimmed and cut into cubes
3 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon black pepper
6 carrots, peeled and sliced
4 potatoes, peeled and cubed
2 onions, peeled and sliced
1 apple, cored and cubed (peeled if desired)
2 cups apple cider
1 tablespoon vinegar, any kind
1/2 cup cold water
1/4 cup all-purpose flour

directions

Combine the pork, flour, salt, thyme, and black pepper in a bowl. Mix well.

Place the carrots, potatoes, onion, and apple in the bottom of the crock pot. Top with the seasoned pork.

Combine the apple cider and vinegar and pour slowly over the pork and vegetables.

Cover the crock pot and cook on low for 4-6 hours.

Turn the crock pot to high.

Combine the water and flour and mix until smooth. Stir into the crock pot. Cover the crock pot and cook for 15 minutes or until the liquid has thickened.

Adjust the seasoning to taste and serve hot.

    I thought this was extremely delicious, I would have liked it a bit thicker, I like to serve stew on a bed of white rice. I'll definitely be making this again, though next time I think I'll try using a roux as the thickening agent instead of flour-water.

    Great recipe. I cooked it on high for 5 and a half hours. The recipe instructions didn't state to mix it up, but we did. It was pretty easy to make, but lots of cutting. I might try using baby carrots next time. Thanks for sharing this yummy recipe!
