ingredients
1 yellow onion, chopped
1 clove garlic, crushed
1 white potato, chunked
1 carrot, sliced
1 celery stalk, sliced
1 zucchini, sliced
1/2 cup broccoli, chopped
1 leek, trimmed, washed and sliced
2 cups tomato sauce
1 tablespoon parsley
1/2 teaspoon paprika
1/2 teaspoon basil
1/2 teaspoon chili powder
1/4 teaspoon dry mustard
1/4 teaspoon cumin
1/8 teaspoon black pepper
directions
Cook the onions, garlic, potato, carrot and celery in a small amount of water in a large saucepan for 10 minutes.
Add the remaining ingredients and cook over low heat until the veggies are tender, about 35 minutes.
