ingredients
1 1/2 cup barley
1 large potato, peeled and diced
1/2 cup amaranth
1 cup frozen corn
1/2 onion, diced
1/2 teaspoon garlic powder
1 tablespoon chopped fresh parsley
1/2 teaspoon dried oregano
1/2 teaspoon dried marjoram
2 cups water, more if needed
directions
Combine all the ingredients in the crock pot and mix well. Add additional water if needed so the ingredients are completely covered.
Cover the crock pot and cook on low for 6 hours or until the potato, barley, and amaranth are tender.
