Beet Salad with Pineapple

ingredients
1 beet, scrubbed and trimmed
1/2 cup crushed pineapple
1/2 cup whipping cream
2 tablespoons chopped walnuts
directions
Place the beet in a saucepan of boiling water. Cook until soft, about 15 minutes. Remove from the water and let cool until it can be handled.
When cool, peel and dice the beet. Add to a bowl with the pineapple slices.
In another bowl, place the cream. With an electric mixer on medium speed, whip the cream until stiff peaks form.
Fold the whipped cream into the beet mixture. Place the mixture in the refrigerator and chill for an hour before serving.
Just before serving, sprinkle the salad with the chopped walnuts.
