Carrots make a great side dish and this cheesy scalloped carrot recipe works great for a large group.

ingredients
1 1/2 cup butter or margarine
1 1/2 cup all-purpose flour
3 quarts milk
1/2 cup lemon juice
4 teaspoons celery salt
2 teaspoons salt
2 teaspoons black pepper
6 pounds carrots, peeled and sliced
2 1/2 pounds shredded cheddar cheese
6 cups crushed butter-flavored crackers
directions
Preheat the oven to 350 degrees F. Grease four 2 1/2 quart baking dishes.
Bring a large pan of water to a boil. Add the carrots and cook until soft, about 8 minutes. Drain well and set aside.
Melt the butter in a large saucepan or stockpot over medium heat. Stir in the flour until smooth and let cook until bubbly, stirring constantly, for about 2 minutes.
While stirring, slowly add the milk and lemon juice. Cook, stirring, until the sauce thickens. Stir in the celery salt, salt, and pepper. Remove the pan from the heat.
In the prepared baking dishes, layer half the cooked carrots, half the sauce, half of the cheese, and half of the cracker crumbs. Repeat the layers.
Place the baking dishes, uncovered, in the oven. Bake at 350 degrees F for 45-50 minutes or until the crumbs are browned.
Serve hot.

Fabulous. Rave reviews from my dinner guests. Very easy to make. I used Dublin creamy gouda cheese instead.
