Flemish Carrots

ingredients

2 tablespoons butter
6 medium carrots, cut into thin 2-inch strips
3/4 teaspoon salt
3/4 teaspoon sugar
1/2 cup water
1/3 cup light cream
2 egg yolks
1 teaspoon lemon juice, more to taste

directions

About 20 minutes before serving, melt butter in a saucepan and saute carrots for about 5 minutes.

Stir in salt, sugar and water. Simmer covered for 10 to 15 minutes or until carrots are tender.

Beat together cream and egg yolks. Remove carrots from heat (do not drain). Stir in cream mixture and lemon juice.
