Caramelized Carrots With Grand Marnier

ingredients
1 package (24 ounce size) fresh baby carrots, or frozen baby carrots
1/3 cup butter
5 tablespoons apricot preserves
3 tablespoons Grand Mariner
minced fresh parsley
directions
Clean fresh carrots and cook in small amount of boiling water for 10 minutes or cook frozen carrots according to package directions. Immediately drain carrots. Run cold water over carrots to stop cooking and preserve the orange color. Set aside.
About 30 minutes before serving, melt butter in large skillet. Add preserves and Grand Marnier. Stir to dissolve.
Remove from heat. Add carrots and cook over low heat, stirring occasionally until the carrots are hot and caramelized. Garnish with parsley.
