Winter Fruit Platter With Cranberry Coulis

ingredients
2 cups cranberries (if frozen, defrosted)
1/3 cup water
1 teaspoon dried rosemary, crushed
1 cup sugar
1/4 cup orange juice
2 seedless oranges, peeled, sliced and halved
1/2 largepineapple, peeled, cored, sliced and cut into wedges
2 large ripe pears, cored and sliced very thin
2 kiwi fruit, peeled and sliced
fresh mint leaves (optional)

In medium saucepan, combine cranberries, water and rosemary. Bring to a boil.
Reduce heat; cover and simmer for 4 to 5 minutes or until berries just begin to pop.
Remove from heat; stir in sugar and orange juice.
When cool, press mixture through a sieve. Discard skins. Cover and refrigerate coulis until thoroughly chilled. (Mixture will thicken slightly as it chills.)
On individual dessert or salad plates, spread about 1/4 cup of the coulis. Arrange fruit atop. Garnish with mint, if desired.
