You'll be "jubilant" from this tangy cranberry jubilee. A simple warm sauce of cranberries, sugar and a splash of brandy poured over vanilla ice cream makes a phenomenal dessert.
1 cup sugar
1 1/2 cup water
2 cups fresh cranberries
1/4 cup brandy
vanilla ice cream
Combine the sugar and water in a saucepan over medium-high heat. Cook, stirring frequently, until the sugar is dissolved.
Bring the sugar mixture to a boil and let cook for 5 minutes without stirring.
Add the cranberries to the sugar and return to a boil. Let cook for 5 minutes.
Transfer the cranberry mixture to a heat-proof bowl or chafing dish.
Heat the brandy in a small saucepan over medium heat. Light the brandy with a long-handled match and pour the flaming brandy over the cranberry mixture.
When the flame goes out, stir the cranberries jubilee and serve immediately over ice cream.

Such a delicious sauce for vanilla ice cream! And you could taste the brandy, but it didn't overpower the rich cranberry flavor. Easy to make and it amplifies any serving of vanilla ice cream.
