Pineapple Wedding Cake Filling

ingredients
1/2 cup sugar
4 tablespoons flour
1/8 teaspoon salt
1 egg
1 cup crushed pineapple, drained
3/4 cup pineapple juice
1 tablespoon butter
directions
In saucepan, combine sugar, flour and salt. Stir in egg, pineapple, and pineapple juice. Cook over medium-low heat, stirring constantly so it doesn't scorch, until thick. Doesn't take long!
Remove from heat and add butter; stir until melted. Cool completely before filling cake.
cook's notes
I frosted my layers with buttercream, then a thin layer of this filling. I also spread a thin layer of buttercream on the underside of the TOP layer, so the filling wouldn't soak into the cake and make it soggy. (I am taking no chances!)
