serves/makes:

ready in:
  under 30 minutes

ingredients

1 teaspoon instant coffee crystals
1/4 cup milk or cream
1/4 cup cocoa powder
5 cups confectioners' sugar
6 tablespoons butter, softened
1 1/2 teaspoon vanilla

directions

Combine all the ingredients in a mixing bowl. Mix on medium speed with an electric mixer until the frosting is smooth and spreadable. Adjust the consistency as needed with extra confectioners' sugar or milk. 1 batch will make enough to frost a 13x9 cake.

recipe tips

Dissolve the coffee crystals in the milk or cream before adding to the other ingredients for better flavor distribution.

If the confectioners' sugar is lumpy, sift it before adding to the other ingredients.

Adjust the consistency of the frosting as desired, especially if piping on the cake.

Use this frosting for cakes, cupcakes, or as a filling for sandwich cookies.

Experiment with the amount of coffee and cocoa.

The frosting flavor pairs well with a variety of cakes.

common recipe questions

Can I use brewed coffee instead of instant coffee crystals?

Not easily. It would require exchanging liquid for the brewed coffee which in this case is milk or cream. So, the consistency would not be the same. You can omit the instant coffee and use 1/4 cup of very strong brewed (and cooled) coffee for a less creamy coffee frosting.

What can I substitute for cocoa powder?

You can omit cocoa powder for a plain coffee frosting or use melted chocolate for a richer flavor.

Is it necessary to use confectioners' sugar?

Yes, confectioners' sugar is preferred for a smooth texture. Granulated sugar will not dissolve completely since this recipe doesn't use any heat and can make the frosting grainy.

Can I make this frosting dairy-free?

Yes, use a dairy-free milk alternative and dairy-free butter.

How do I know when the frosting is the right consistency?

The frosting should be smooth and spreadable. If it's too thick, add a little more milk; if too thin, add more confectioners' sugar.

Can I use other flavors in this frosting in place of vanilla?

Yes, you can add flavors like almond extract, ground cinnamon, or hazelnut syrup, or something like brandy or bourbon for a different flavor.

How should I store the frosted cake?

Store it in an airtight container in the refrigerator.

Can I prepare this frosting ahead of time?

Yes, you can make it ahead and store it in the refrigerator. Bring it to room temperature and re-whip before using.
